Equipment

  • 1 High-speed blender Vitamix, Blendtec, or Ninja recommended
  • 1 Cutting Board
  • 1 Sharp Chef's Knife
  • 1 Small spoon for scooping flesh and removing seeds
  • 1 Medium mixing bowl
  • Measuring cups and spoons
  • 2 Serving bowls chilled in the freezer for 10 mins

Ingredients
  

  • 2 tbsp ripe sugar apples, peeled and deseeded (about 1 cup flesh)
  • 1 piece large frozen banana
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsweetened coconut milk
  • 1 tsp fresh lime juice
  • 5-6 tbsp Lemon juice

Instructions
 

  • Cut sugar apples in half and scoop out flesh. Remove ALL black seeds (they are toxic) and discard.
  • Add deseeded sugar apple flesh, frozen banana, Greek yogurt, coconut milk, lime juice, and mint to a high-speed blender.
  • Blend on high for 60-90 seconds until completely smooth and thick. Scrape down sides as needed.
  • Pour into chilled bowls and arrange toppings artistically.
  • Serve immediately within 10-15 minutes.
